Known for its writers and scientists, medieval monuments and performing arts festivals, Edinburgh isn’t usually considered a 21st-century culinary capital. Though haggis may be an acquired taste, skeptics stand to be pleasantly surprised by Edinburgh’s cuisine (which has claimed its share of Michelin stars over the past decade). On chalkboard tasting menus and at maverick hole-in-the-wall pubs, chefs all over the city are spotlighting Scottish produce along with local oysters, cheeses and of course, whiskies.
