Across the street from Tbilisi’s funicular, Poliphonia is one of painter and restaurateur John Wurdeman’s restaurants, serving seasonal Georgian fusion dishes. Vegetables feature prominently on the rotating menu, which highlights the freshest produce on the market that day. Though the plates are elevated from typical Georgian cuisine, the environment couldn’t be more relaxed. The natural wine list is also a standout; it changes nightly to pair with the evening’s plates. Diners will also find Lost Ride Beer on the menu.
