This much-lauded restaurant gained popularity due to its inventive take on Filipino cuisine. Traditional dishes are reimagined, often employing the French techniques that Chef Mikel Zaguirre learned while working under a Michelin-starred chef in Paris. True to its name, Locavore uses only local ingredients, and its farm-to-table approach is elevated with surprising twists on classics. Examples include turon, a fried banana treat that is presented like a French puff pastry; kare kare wings, Korean-style chicken wings prepared with the distinctly Filipino flavor of roasted peanut stew; and pakbet ratatouille, prepared with okra, bitter melon, eggplant and other vegetables steeped in fish sauce.
