Father-and-son duo Michel and Sebastien Bras—whose flagship restaurant Le Suqet in the French Aveyron region has earned two Michelin stars—crafted the brilliant, intricate menu of this indoor rooftop restaurant at the Bourse du Commerce, a magnificent space dedicated to contemporary art from all over the world. The focus is on cereal, grain and vegetables (although there is also meat) and was inspired by the building’s original purpose as a grain storage and trading hub in the late 1880s, depicted in the scenes in the mural just under the building’s central cupola.
