The new Noma is a culinary hot spot that remains one of the most difficult reservations in the world. Run by legendary chef René Redzepi, who has worked at such Michelin-starred establishments as El Bulli and the French Laundry in Napa, Noma focuses on innovative Scandinavian cuisine, and ingredients and inspiration come from every Nordic spot imaginable, including such lesser-known territories as Greenland and the Faroe Islands.

Since closing the original warehouse location of the restaurant in early 2017, Redzepi has opened the new incarnation of Noma on the edge of the free city of Christiania. The new restaurant first welcomed guests in February 2018 and tables have been selling out ever since.

The new menu divides the year into 3 seasons, serving fresh ingredients at their peak in very different ways. The Seafood Season menu runs from winter to spring, the Vegetable Season menu runs from summer to early fall, and the Game & Forest Season runs from early fall to the end of the year. Most of the ingredients showcased in these menus are sourced from local farmsteads, grown on site or foraged from nearby estates—and they are employed with great attention both to flavor and to artistic presentation.

The new restaurant space is similar in décor to the original, but it occupies an extensive amount of square footage that includes seven buildings, three greenhouses and vast areas for butchering, wine cellars, fermentation and storage. With an interactive space to match the ingenuity of the cuisine, the new Noma is perhaps even better than the original.

Note: must book well in advance.

Since its creation, Noma has been a groundbreaking force in the international food scene, as well a leader of the New Nordic Cuisine movement. In addition to inspiring cookbooks and documentaries, the alumni of the original restaurant space have since gone on to found their own impressive restaurants in Copenhagen and around the world. Some of the most successful include 108, Barr, Hija de Sánchez and Manfreds—and they should not be missed.
