Californios takes Mexican cuisine to a new level entirely. Chef Val Cantu, named one of America’s best new chefs by Food and Wine, has earned Californios two Michelin stars for its extensive tasting menu featuring such creations as butter poached lobster in a tiny blue corn tortilla. A meal at Californios is a revelation; take your time to savor each delicately crafted course, sourced as it is with the best ingredients in the world (the chef uses, for example, Japan’s finest wagyu beef for his carne asada).
