Steve Wynn kicked off the fine-dining craze in Vegas at the Bellagio, and every famous chef in the world has wanted part of the action ever since. Such names as Michael Mina, Charlie Palmer, Emeril Lagasse, Bobby Flay and Thomas Keller have all passed through Vegas at one point (and many of them remain). In terms of ambience, none of the restaurants come close to the originals—they’re in massive hotel/casinos, but over-the-top Vegas vibe aside, you eat really well in this city.
