Located on a manmade island that is connected by bridge to Amsterdam’s city center, Mos is an architectural marvel. But the industrial-cool setting is overshadowed by the haute cuisine, delivered by Egon van Hoof, who previously worked at the two-Michelin-starred Aan de Poel in Amstelveen (one hour from Amsterdam). The modern interiors feature emerald velvet chairs, a copper-paneled bar and floor-to-ceiling windows that frame the river and dramatic EYE Film Institute. The three-story fine-dining restaurant specializes in French-International dishes and offers both an à la carte menu as well as four-, five- and six-course menus. While the offerings changes seasonally, diners can expect creative combinations like tempura cod with coconut sauce, wasabi and kaffir lime and barbecue rib eye with chanterelles, onions, gherkin and gravy.
