Amsterdam may never become a gourmet capital like Paris or London, but if you know where to book, you can eat very well. Particularly famous is De Kas, a beautiful fine-dining restaurant that is located just outside the city in a soaring glass conservatory. Be aware that waiters in Amsterdam do not work for tips, so service can be a mixed bag.
