Turks & Caicos: Where to Eat: Big Night Out: Lotus

Lotus

The bad news first: this restaurant is open only to guests staying at Parrot Cay, but those who are booked are in for a treat. Diners are seated poolside, surrounded by flickering torches and candles, and order from a primarily Asian-inspired menu. Chef Anna Rossel used to work at Como Uma Paro in Bhutan, and her flavor combinations are focused, straightforward and delicious. A meal here might include a young-coconut-and-mushroom soup spiced with cilantro, and an innovative version of Pad Thai, served with juicy chunks of Dungeness crab. Save room for dessert, which may include homemade coconut ice cream and chocolate sorbet.
